After my realization that we were buying so much packaging to sustain my sons granola bar habit I decided to make my own. How hard could it be? I found a great blog post that promised Quaker-like granola bars http://backtothecuttingboard.com/dessert/no-bake-chewy-granola-bars/.The writer of this recipe did such a good job on the post that I am not going to copy it. Instead, I hope you will visit her post and be inspired by her words and photos.
I used the peanut butter chocolate chip recipe but only used chocolate chips. That is what I had in my cupboard already. I did buy some bulk brown sugar in a paper bag, non-bulk granola in a plastic bag and some Canadian honey. I used natural soy wax paper instead of parchment. The directions are super simple. If you can make Rice Krispy squares you can make these. It suggests trying only 1/4 cup of brown sugar at first. If the bars end up too soft than the brown sugar can be upped to 1/2 cup. Well, the granola bars were super tasty but fell apart so easily. I had to refrigerate them to harden them up enough to cut them into bars. My kindergartener tried a bit. A little, tiny, bit. He said it tasted good. Unfortunately it was just a small taste. The rest ended up being eaten by me. Yum yum. I think they did taste like chewy Quaker granola bars but with a kick of honey. I will try the recipe again but with more brown sugar. Hopefully with harder bars there will be more success. It would be great if my kindergartener would eat them.
Cooking and baking for picky people is annoying. For all you single people that like to cook, think about that when dating! It’s like loving to dance and marrying a non-dancer. Wait… I did that too!

You and me both! I have to add that I was a vegetarian and I married a meat eater. We then went on to spawn two of the pickiest eaters ever. I try to hide from all of them at dinner time, but they always find me…
I take solace in the small victories. Like that my oldest son will now let the piece of orange stay on his plate.
