What I'm doing to be...


On Sunday I read about a blogger named Jennie who asked people to make a peanut butter pie to share with the ones they love. Her husband recently died of a sudden heart attack. The first thing I did after reading a few posts about it was go and hug my husband. We had just been arguing a bit over some stupid things. I was overwhelmed by the thought of ever losing my Mikey. He is my heart. Together we have created two wonderful sons. My oldest loves to give people what he calls “A hug, a kiss and a tickle”. He says what he’s doing to you while he’s doing it. The first two actions are done and said slowly then he speeds up on the “andatickle!”. Like we won’t realize until it’s too late that he plans to end it with a tickle. Even after the hundredth time. I love that about him! I am so lucky and blessed to have my family and close friends. The thought of losing any of them makes me well up. So very late but with good intentions here is my peanut butter pie. I shared it with our sons and a wonderful friend today.

Over 1,000 pies have been made in honor of Mike Perillo. http://twitter.com/#!/search?q=%23apieformikey I somewhat followed the directions and altered some of the ingredients. Instead of whipping cream I used light cream that I tried to whip a bit. As we only use natural pb in our house that’s what was put in the pie too. I used Oreo crumbs instead of buying chocolate cookies that needed to be ground. My Magic Bullet ground whole peanuts already in my cupboard which was easier that me hand chopping them. I had some homemade butter so I didn’t need to buy it. Plus I doubled the vanilla because I heard somewhere always to double the vanilla when baking. It was put in the freezer to firm up over night. It was very sweet and reminded us of peanutty cheesecake.
